What do I need for this magic mushroom pasta?​

  • 2 grams magic mushrooms of choice
  • 2 links of Italian sausage
  • 1 lb spaghetti or penne
  • 2 T chopped fresh parsley (if you’re using dried parsley, limit it to 1 T)
  • 2 T fresh lemon juice (I tend to add an extra tablespoon due to my fondness for lemons)
  • Olive Oil
  • Salt & Pepper (S&P)
  • Garlic powder
  • Parmesan cheese

The Recipe Itself: Crafting the Perfect Magic Mushroom Pasta

Step 1: Preparing the Water and Pasta

Get your salted water on the stove in preparation for your pasta and wait for the water to boil. 

Step 2: Sautéing the Sausage

In a large sauté pan, heat a generous dash of olive oil. Add your sliced Italian sausage and leave on medium heat until sausage is cooked through. Set aside. 

Step 3: Cooking the Spaghetti

Once your water is boiling, add your spaghetti and cook according to the packaging instructions. 

Step 4: Combining Pasta and Mushrooms

After draining the cooked pasta, return it to the pan. Drizzle in about a 1/2 C of olive oil, and mix with salt, pepper, lemon juice, parsley, garlic powder, and parmesan. Mix well. Then combine the pasta with Italian sausage and sliced magic mushrooms. Add more seasoning to taste. 

Step 5: Presentation

If you’re aiming for a visually appealing dish, reserve a portion of the mushrooms to place them in the center of the pasta dish. This not only adds a touch of elegance but also highlights the star ingredient. Side note – you can always add cooked baby bella mushrooms or portobello mushrooms for an extra-shroomy dish!
